I love the blog Iowa Girl Eats. She has a lot of yummy recipes and she is also gluten free, so if that is something you need she is a great resource for you! I saw this salad yesterday and it looked and sounded so delicious that I had to make it! I love veggies and I love things that are marinated so it was the perfect combo for me. I ate it tonight and it was so good I decided I had to throw it on here. It would be the perfect salad for your 4th of July BBQ or picnic. It took me maybe ten minutes to throw it together, maybe. Although it does require a little planning ahead, she recommends you let it marinate for at least 4 hours but overnight is better. So yummy and tangy and crunch. So run to the store and buy what you need, throw it together tomorrow night and you have a great salad for the 4th! It’s healthy so that means you can eat more hot dogs, chips and desserts. After all, it’s all about balance! 🙂
Marinated Veggie Salad
Iowa Girl Eats2 cups chopped cauliflower
2 cups cherry tomatoes (I just did 2 Romas in chunks)
2 cups chopped carrots
1 cucumber diced
1 bell pepper dicedVinaigrette
1/2 cup olive oil
1/2 cup red wine vinegar
2 T shallots (I left these out)
4 tsp Dijon mustard
2 tsp Italian seasoning
2 cloves garlic
Salt & PepperMix up vinaigrette and set aside. Chop up all veggies in big bowl, pour vinaigrette over veggies and stir up. Leave in fridge to marinate over night. Stir again before eating and season with salt and pepper.
