Don’t Quit


I know the process can seem long and hard and sometimes we are so tired from trying. So tired from all that is required of us in life and it just seems so much easier to quit. But don’t do it. Don’t quit. Learn to rest. Whether it’s a day off from exercising, a day where you eat whatever you want. A nice leisurely walk with your kids. A massage or getting your nails done. Shopping with your friends or a date night with your hubby.

Figure out what kind of rest if just right for you and do it. You are tough, you can do this. Don’t give up, just don’t quit! Just think how happy you will be one week from now, one month from now and one year from now that you didn’t quit. When you can look back and see how far you have come!

Shake It Off


One of the very best and absolute most important things you can do is to learn to love yourself. It’s hard I know, I struggle with this one a lot. But it is something I have really been working on and am finding that on most days it is getting a little bit better, a little bit easier. The cool thing is that as you learn to love yourself more you realize that what others think of you doesn’t matter as much as you thought. Just because they may not see your awesomeness doesn’t matter at all. You know how great you are and you learn that you are not defined by what others may or may not think of you.

My little girl may be a little obsessed with Taylor Swift and her song Shake It Off. I hear it a lot and it’s become one of my anthems. So I leave you with her profound words of awesomeness, just shake it off. Who cares what they all think, just be the awesome you that you are! Enjoy!

Simple Healthy Rules

I don’t know how many of you have heard of “Feel Great In 8“? It’s get healthy challenge that goes for 3, 5 or 8 weeks, I think there is a cash incentive but not sure. I haven’t ever done this challenge but I think it is a great idea if you like something to help motivate you. It doesn’t focus on losing weight, it focuses on physical, mental and spiritual health. I look at their blog periodically, they have a lot of great things on there and some yummy looking healthier treats I want to try. I saw this on their Instagram account the other day and thought I would share. It makes being healthier so simple and easy to wrap your hand around! Anyway, check out their site if you want to do a challenge to help give you a jump start and make sure to remember these simple healthy rules! Maybe even write them on a paper and put them on your fridge as a good reminder for you every time that you open that fridge to eat!


I don’t struggle with the first one, I don’t really like soda and I LOVE water. Weird one over here I know. 😛 But I will definitely be implementing all of these into my life. I think whatever you are trying to make better or where ever you are in your journey, all of these things will make life just that much better!


Slow Cooker Pulled Pork Gyros

I did a post awhile ago (here: and shared my tips on buying meat in bulk and prepping it to make meals easy. Well this here my friends is the recipe for that amazing pork gyro meat. I was impressed with the flavor and it was so easy! We ate this for days and neither Rob or I got sick of it. I don’t remember if Olivia liked it…I think that was back during her hunger stike…


The recipe comes from a great blog Damn Delicious. I haven’t made tons of her recipes, but the ones I have are good! We ate this on flatbreads that I bought at Costco! Yes it’s a big pack but they are so much cheaper there. And they freeze super well, make yummy pita pizzas, paninis, and i have even broken one in half and toasted it! Chop up some tomatoes and cucumbers, grab a bag of coleslaw mix and make the super quick dressing. Or you can buy coleslaw dressing. Last time I was at the store I found, in the produce section where refrigerated dressings are, an OPA by Litehouse Feta and Dill dressing. I think it will be awesome on these! Try it out, hope you enjoy it as much as we did!



  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 2 teaspoon dried oregano
  • 2 teaspoon cayenne pepper
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 2 1/2-3 lb pork loin, excess fat trimmed
  • 2 tablespoons olive oil
  • 4 cloves garlic, peeled
  • 2 red onions, quartered


  • 3 tablespoons Greek yogurt
  • 3 tablespoons mayonnaise
  • 1 1/2 tablespoons apple cider vinegar
  • 1 1/2 teaspoons sugar, or more to taste
  • 1 1/2 cups shredded cabbage
  • 2 carrots, peeled and grated
  1. In a small bowl, combine chili powder, cumin, oregano, cayenne, salt and pepper. Season pork loin with spice mixture, rubbing in thoroughly on all sides.
  2. Heat olive oil in a Dutch oven or large pot over medium high heat. Add pork loin and sear both sides until browned, about 3-4 minutes per side.
  3. Place garlic, onions, pork loin and 1 cup water into a slow cooker. Cover and cook on low heat for 8 hours or high for 4-5 hours.
  4. Remove pork loin from the slow cooker and shred the meat before returning to the pot with the juices; season with salt and pepper, to taste, if needed. Cover and keep warm for an additional 30 minutes.
  5. In a large bowl, combine cabbage and carrots. In a large glass measuring cup or another bowl, whisk together Greek yogurt, mayonnaise, apple cider vinegar and sugar, to taste. Pour mixture over cabbage slaw, and stir using a rubber spatula until well combined. Cover and place in the refrigerator for at least one hour.
  6. To assemble, top each pita bread with pulled pork, slaw, tomatoes and avocado. Serve immediately.


It’s OK

I am sorry for being a slacker, I miss writing on here, I really really do. For some reason it has just been super hard for me to make myself do it. I think about it but just can’t get myself to do it. And before I know it a month has passed me by…

But then I saw these words of wisdom today, not even sure where, and I had to share because the idea behind these words is how I live my life day to day. It’s how I survive with all the negative self talk that can get in my head. It’s how I tell myself things are fine and I am doing a good job in staying healthy.


It’s ok to eat a little treat every day. And it’s just fine if over the weekend you had a lot of treats one day. And it’s ok if you missed a couple of days working out because your kids were sick or you had family in town or you just didn’t feel like it.

This has been my life lately. I have been having a hard time working out with our schedule right now and it’s not warm enough in the mornings yet to put Olivia in the stroller for a long walk. And I have been eating lunch dessert and dinner dessert…and some days there are treats in between…

But it’s ok. I just tell myself it’s ok. One bad day or a couple of bad days or a bad week isn’t going to undo all of the hard work I have done. I just dust myself off and start new tomorrow. So don’t forget those words up there. You have to enjoy life, you have to enjoy your family and friends and you need to have a life. Find what works for you and if it’s not a perfect day don’t beat yourself up. None of us are perfect. So goodness, enjoy that treat and don’t feel bad about enjoying it and then jump back on the wagon tomorrow!

A Quick & Easy Side

I love side dishes if someone else makes them but I hate making them myself. Ok, I don’t hate making them but I just can’t ever think of what to make. So in the winter time this is my go to side dish multiple nights a week…sometimes every night! It goes well with anything and tastes fresh and is healthy for you!


So here you go, no real recipe because it is so simple! Make this as big as you need but for my little family I use one apple, one orange and one banana. Dice them all up, mix together and enjoy! Lately my mom and sister introduced me to sprinkling True Lemon on top and it’s so good! Adds another fresh level to it. It’s just crystallized lemon and it has so many great uses.


You can make this fruit salad as fancy as you want it. Add kiwi, pomegranate or pear. Make it more of a dessert and toss it with some whipped cream. It’s delicious!

Also, I had to throw this pic in because I thought the size in orange slices was funny…this was all from one orange! Haha the things that become funny when you hang out with a toddler all day…
